twd- Sweet Potato Biscuits

This week's Tuesday's with Dorie recipe, Sweet Potato Biscuits, was chosen by Prudence Pennywise. Prudy is one of my favorite bloggers. You can find the recipe on her blog.
I have made soo many of her recipes and posted about a lot of them. She makes healthy taste delicious and she does it on a budget!

I have made these biscuits before. About a year and a half ago- when I was new to blogging.
Last time I made these biscuits with orange honey butter -check it out HERE.
I remembered how delicious they were, even though they didn't rise very much when they baked. Last time I made them I used canned sweet potatoes. This time I used a fresh sweet potato. I roasted it in the oven and mashed it.

The only problem I have had both times I made these is getting the dough to form. I end up over-mixing/kneading it because it isn't moist enough to come together.
I should have just added more sweet potato or a splash of cream/milk/half&half to make the dough come together. Next time!
They were good though.

I made the full batch and they only lasted a couple hours. My kids down these things.

Your biscuits look great! Sounds like several people had problems with the dough and with them rising. At least they tasted good! I really want to try those pumpkin biscuits too!

Not sure why so many people had the same problem with them? Spiced pumpkin ones from CL sound interesting.

These biscuits were really tasty despite their refusal to rise. Your biscuits look wonderful. I'm going to have to give the pumpkin spice ones a try. Yummy.

I am learning a lot from all you experienced bakers...some cream would help that, right? Okay, I will give that one a try. Yours look lovely and I like the idea of that butter!

Funny, I made orange honey butter, too. It just seemed like it would "go" with it... luckily it did! Mine rose pretty well, but I had low expectations. Not because of the recipe, but because I'm AWFUL at making biscuits.

Unfortunately, I am not a fan of biscuits, so I made cupcakes instead with white sweet potatoes!

I think they look great! I know what you mean about the dough being too dry. I ended up having to add more pumpkin to mind. I was afraid of overworking and had a few flour spots!

The orange sounds great with these. I made both pumpkin and sweet potato. Liked the pumpkin ones better, but probably because I drizzled a cinnamon icing on them! I added a little cream to the not-moist-enough dough!

Your biscuits look terrific! I had trouble forming mine even after I added a splash of cream. Oh, and the honey butter? Great idea - must try it soon.

Thanks for sharing that CL recipe - I'm going to give it a shot since I didn't have great luck with this one.

Your biscuits look lovely and the honey butter ones sound delicious too! I had the same problem with the dough being a little dry.

Mine didn't rise much either but they sure had a nice flavor. The pumpkin biscuits do look like great risers!
