Happy New Year Everyone!
I hope everyone had a great 2009 and that 2010 brings more happiness and joy to your lives.
I am excited about a new year and a chance for a new start in some ways.
I have had a crazy couple of weeks and decided to take the past couple days off from updating this blog, even though I have lots of things to post about.
I made these at least a month ago, if not more because I had leftover pork and squash from this dish, (which I must ask- have you made it yet? because if you haven't, you really should, not only because it is incredibly delicious, but also because you can make THESE with the leftover pork as well)
I remember seeing a couple recipes for Pork and Squash Burritos and I knew that they would be really great with this leftover pork and squash, which was already wonderfully spiced and cooked.
I didn't follow the recipe exactly, mainly because my squash and pork were already cooked, but most of the spices are the same.
I filled my burritos with spinach and cooked quinoa.
Yummy.
If one of your goals for 2010 is trying new foods or new combinations of foods, this would be a good one to start with.
Come back tomorrow for details on how I am going to make 2010 a really healthy year!
Enjoy your first day of 2010!

Spice-rubbed Pork Loin with Acorn Squash
(The MSC Bonus Cupcake post is below this one)
I am not usually excited about making recipes that have a big piece of meat as the star of the show, but for some reason this pork loin and squash recipe really caught my eye. I saw it in the November issue of Everyday Food and both parts look amazing. The caramelized squash just looked so delicious and the spice combination sounded perfect for the pork. I used a smaller pork loin than the recipe called for and for that reason, did away with one of the steps, which I noted in the recipe below.
The squash was so tender and delicious, it was simply amazing. The best acorn squash I have ever had.
The pork was an absolute hit. My hubby declared it the best meat he has ever tasted and my kids went crazy for it. The perfect combination.
Plus, I had enough pork and squash leftovers to make 2 other meals later in the week. That was even better.
You must try this recipe, I promise you will love it.
Spice-rubbed Pork Loin with Acorn Squash from Everyday Food November 2009
Ingredients
- 4 tablespoons extra-virgin olive oil
- 1/4 cup packed light-brown sugar
- 1/2 teaspoon ancho chile powder or other single chile powder
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 2 pounds acorn squash, seeded and cut into 1-inch-thick wedges
- 1 boneless pork loin (3 pounds), tied (I used a 1.5 pd pork loin, not tied)
- Coarse salt and ground pepper
Directions
- Preheat oven to 425. In a large bowl, stir together 3 tablespoons oil, sugar, chile powder, cinnamon, cumin, and 2 tablespoons water. Add squash and toss to coat. Set aside.
- Generously season pork with salt and pepper.( Heat a cast-iron skillet or other heavy pan over high. Add 1 tablespoon oil and swirl to coat. Cook pork on all sides until deep golden brown, about 10 minutes total. Place pork on a rimmed baking sheet; pour oil from skillet onto sheet and spread evenly. I skipped this step because my pork loin was smaller and I knew it wouldn't take as long to cook in the oven. I just added a little oil to the sugar mixture that I used on the squash)
- Arrange squash around pork. Brush pork with sugar mixture from bowl. Bake until pork is cooked through (an instant-read thermometer inserted in center should register 135 degrees), 40 to 45 minutes, brushing meat with sugar mixture and turning squash every 15 minutes. Tent pork with foil and let rest 10 minutes before slicing.

2 Thanksgiving Sides- Autumn Hash and Vegetable Trio with Orange-Thyme Dressing
I love roasting vegetables. I truly believe that any vegetable can taste delicious if you roast it in the oven with a little bit of olive oil, salt and pepper. It's true for brussel sprouts, parsnips, beets, cauliflower, etc. I could give millions of examples.
I saw a couple of recipes in the Thanksgiving issues of food magazines and these 2 side dishes really looked delicious. I decided to try both of them and see if they would be a great addition at a Thanksgiving dinner. Both of these would be great for a special occasion, but I also think they would be great anytime. Delicious.
The first recipe comes from Bon Appetit and I thought it looked beautiful with all the different colors and I loved that they included the beet greens, mixing them in with the oven-roasted vegetables. The original recipe calls for potatoes, sweet potatos, yams, baby golden beets, and butternut squash. I changed it a little bit and decided to use red potatoes, butternut squash, golden and red beets. The fresh herbs it uses are oregano, Italian parsley, and rosemary.
I couldn't find baby beets, so I just used normal sized beets and cut them into small pieces.
This was really delicious and a great way to get more vegetables on the table!
Recipe for Potato and Autumn Vegetable Hash
The second recipe I found in Ladies Home Journal. It combines acorn squash, carrots, and beets. It also has a fabulous dressing that combines thyme (one of my fave herbs) and orange juice/zest. Delicious! The thyme and orange really go great together and make these vegetables taste amazing.
Spice up your thanksgiving table by adding some delicious color and nutrition with roasted vegetables!

Bulgur and Chickpea Stuffed Squash
First of all an apology to my fellow Barefoot Bloggers- I am going to be posting the Vegetable Pot Pie a few days late. I waited until the last minute and then got a surprise opportunity to participate in a pizza cook-off, but had very little notice to get ready. So, as you read this, I am probably throwing my pizza together, hoping the judges like it enough to call it the winner!
I thought I would share this delicious dinner we had the other night. Ever since I tried the Butternut Squash Risotto a few weeks ago- I have decided to give all winter squash another chance. My mom used to make it alot when I was a kid and I wasn't very fond of it. But, now I love it!
This dinner was so good. I reduced the amount of sausage and used turkey sausage instead. I also added a can of chickpeas because I thought it would taste good in this. I added some chicken stock at the end to keep it moist and this was a beautiful all in one dinner. The acorn squash made cute little bowls and the combination of the bulgur filling with the slightly sweet squash was amazing. Please give it a try, even if you don't like squash, you might be surprised. I am now a lover of winter squash!
p.s. I will get the vegetable pot pie up over the weekend, so come on back!
