Veggie Burger

   I found this recipe in a magazine.  I tore it out and of course, could not, for the life of me, remember what magazine I tore it out of.  Luckily for me, this recipe is all over the internet, so I felt okay about not remembering the specific magazine where I found this in the first place.  I had never heard of The Counter, but from what I've gathered it is a burger place.  There were lots of rave reviews about this Veggie Burger and now I know the reason why.  

I really like how easy this recipe is and the fact that it contains wholesome ingredients. Sometimes Veggie Burgers are full of fillers and wierd things, but not these ones!  The flavor and texture are wonderful.  I made these the day before I cooked them and they were delicious.  My friend who came over for lunch to enjoy these with me, liked them so much that she made them for her family as well.  

Veggie Burger from The Counter

2 teaspoon extra virgin olive oil
1 onion, small dice
3 each garlic cloves, minced
2 carrots, grated
1 yellow squash, grated
1 green zucchini, grated
1 ½ cups rolled oats, (instant is fine)
¼ cup cooked black beans
2 tablespoon Italian parsley, chopped
1 egg, beaten
1 teaspoon salt
1 teaspoon paprika
¼ teaspoon black pepper
2 cups all-purpose flour

Directions:
1, In a large skillet, heat the olive oil until almost smoking, Add the onions and lower the heat to medium. Mix and then add the garlic. Cook until tender and soft.
2, Add the carrots, squash and zucchini and season. Cook for about 3 to 4 minutes until soft and hot. Add the black beans, egg, paprika, parsley and oats.
3, Take off heat and mix. Place in a bowl and let rest for 1 to 2 hours.  (or overnight)
4, Form veggie patties to desired size and place in flour to lightly coat.
5, Place a large skillet on the stove on medium high heat,  add olive oil, and when hot place patties. Flip the burger when golden brown, about 3 to 4 minutes and cook the other side the same.

Mini Cheeseburger Salad with Yellow Mustard Vinaigrette

I first made this salad a few years ago and it was an absolute hit. I made it for my family, made it for potluck dinners, made it for company, and shared the recipe with friends. It takes everything that is delicious about a cheeseburger and makes it even more delicious.

You make little burgers, along with a delicious mustard vinaigrette and they are layered on a bed of romaine, cherry tomatoes (I still have some growing in my garden!), and sliced dill pickles. My whole family loves this one, even me.

Turkey Burgers and Hummus



Isn't it funny how photos turn out when you let your kids help you out? This turkey burger looks like a creature with two eyes- please don't let that distract you from trying it out!

I made both of these recipes for our dinner with friends a few weeks ago and wasn't planning on sharing either of them at the time. But then, we tasted them and everyone raved and I figured it wasn't fair not to share the goodness. The turkey burgers were so good. It must have been the fresh herbs and the little bit of olive oil mixed in. They were so flavorful and not dry at all.
The hummus had a great consistency and was just really good. Both of these were perfect to serve at a family friendly gathering. I look forward to making them both again!

Eggplant Burgers with Homemade Tzatziki Sauce

Aggie shared this recipe on her Facebook page a few weeks ago and as soon as I saw the recipe, I knew I would be making these for dinner asap. I had picked a couple of eggplant from my garden the day before and couldn't wait to serve these up for dinner.

The burgers contain eggplant in 2 ways- steamed cubes and shredded. A few other ingredients are mixed in and then they are ready to cook.
They are topped with a delicious homemade tzatziki sauce and Aggie suggested serving them on toasted english muffins. I was happy to add a slice of homegrown tomato. Nothing beats a tomato from the garden!

These were a huge hit with my daughters. My 4-year old gobbled hers down and was the first one finished. My son was not a huge fan, but he doesn't really care for eggplant in any way. He still finished his though. I was glad that there was one burger leftover for me to have for lunch the next day!

Homemade Veggie Burgers on Whole Wheat Hamburger Buns

I have been wanting to make these Veggie Burgers for a very long time. I saw the recipe and saved it for later. Somehow it just didn't feel right to make these bright Veggie Burgers during the colder months, so now that the weather is beautiful and sunny and people are starting to cook out and use the grill more, I decided to try them. I think one of the other reasons I kept putting them off is because it seemed like there was a really long list of ingredients, but once I got down to it, I realized it wasn't really that lengthy or complicated. I decided to throw them together on a day when I was busy chopping and dicing things for a couple other recipes and then I formed the patties and let them sit in the fridge for a couple of hours.

I also decided to make my own buns, just for fun. A whole wheat bun seemed to be the perfect partner for a veggie burger.

These burgers were really good. I loved the texture and they had great flavor. These are a great way to enjoy a meatless option whenever you want a burger.
I also have to add that I really love being able to go to my garden and cut fresh lettuce whenever I want. The red leaf lettuce I used on this burger is really yummy.

Spiced Turkey Burgers


So its been about 6 weeks since my Dad started my garden for me. I have been watering and weeding and watching in amazement as the veggies have grown so quickly. So many of my veggies are doing great and when I made these little burgers, we were able to use some of the green leaf lettuce from our own garden to make little wraps! So fun and exciting to harvest your own produce.

I don't know how I found this recipe, but I had a little feta in the fridge and these little patties can be made ahead, so they were the perfect thing to mix up before church and grill as soon as we walked in the door. I used my indoor grill and we were eating lunch within about 15 minutes.
These burgers were flavorful and juicy. I made them into smaller patties, so that we could have wrap them in lettuce leaves. Fun and delicious!

Fried-Egg-Topped Turkey Burgers with Kale Salad

Sometimes I see a recipe that looks a little bit wierd and interesting at the same time, so I have to try it. This was one of those. I couldn't get over the idea of a fried egg on top of a burger.
The more I think about it, I guess it isn't that strange. Kind of the same idea as a breakfast sandwich with egg and some sort of meat, just switched around a bit.

We don't eat burgers often, but every once in awhile we have some version of a burger and this time they just happened to be topped with a fried egg.
Maybe this is some sort of food fad, but if it is, I have never seen it before.

I changed a few things- like getting rid of the mayo that was on the bread, and switching out the Italian bread for a bun, but mostly we stuck to the recipe. We added romaine to the burgers and my kids even had some ketchup. Eggs and ketchup can go together, right?

The kale salad was the perfect thing to have on the side. Crunchy, raw and slightly tart. Letting the kale marinate in the lemon juice/olive oil softens it a little, but it still keeps lots of crunch.

If you make burgers at home often, this would be a fun way to change it up a little bit and even if you don't, it still makes a great dinner.

*Instead of Italian bread, we used old-fashioned hamburger buns
* I used 93% lean ground turkey
*I made sure my egg yolks were cooked through, by flipping my eggs over

Chicken Parm Burgers and Carrot Fries

I saw this recipe for Chicken Parmesan Burgers in Bon Appetit magazine and thought it was a really fun twist on chicken parm and a burger.
We don't eat burgers very often or meat for that matter, but these just looked too fun to pass up.
I used some local, lean ground turkey (93 % lean) instead of ground chicken since it was from a local farm and I have switched the two before with great results.

I had also seen a recipe for Carrot Fries that I wanted to try and this was the perfect opportunity to have a classic "burger and fries" dinner, but without the classic part.
The burgers were great. I made them smaller than the recipe said because I used a whole grain baguette for the "bun" and didn't want the burgers to be too big for the bread.
I used basil from my basil plant (Yay!- I love having my own herbs!) and used provolone cheese instead of the fresh mozzarella called for since that is what I had in my fridge.

I think I overcook my carrot fries a little bit, but they were still delicious.
This was a fun dinner.

Garlicky Garbanzo Burgers

I love looking at the newspaper on Wednesday because I know that is when they print the Food section. Lately they have had some great recipes. We had these burgers along with Zucchini Soup (posted below) for a great meatless meal!

GREAT GARLICKY GARBANZO BURGERS adapted from The Deseret News
Start to finish: 20 minutes
1 1/4 cups bread crumbs
4 cloves fresh garlic
1 small onion (for about 1/3 cup finely minced)
1/4 green bell pepper (for about 1/4 cup minced)
1 can (15 ounces) chickpeas (garbanzo beans)
1 large egg
1/2 teaspoon black pepper
1/4 teaspoon salt, or to taste
2 Tbls olive oil
1/3 cup all-purpose flour
1/4 cup fat free mayonnaise
1 tablespoon fresh lemon juice
1/2 teaspoon extra-virgin olive oil
4 sandwich buns, for serving
4 lettuce leaves, for serving
4 tomato slices, for serving

Put the bread crumbs into a medium-size mixing bowl. Set aside.
Peel the garlic, and drop the cloves through the feed tube of the food processor with the motor running to finely mince them. Peel the onion, cut it in quarters and place them in the food-processor bowl with the minced garlic. Cut the bell pepper piece into quarters, and add them to the processor bowl. Pulse the motor until the onion and pepper are finely minced but not mushy, stopping once or twice to scrape down the sides of the bowl. Add the minced vegetables to the mixing bowl with the breadcrumbs.
Open the chickpea can and pour 2 tablespoons of the liquid from the can into the processor bowl. Then drain the chickpeas into a colander, discarding the remaining liquid, and rinse the chickpeas under cool tap water to remove excess sodium. Shake the colander to remove as much water as possible, and add the chickpeas to the processor bowl. Add the egg. Pulse just until the chickpeas are finely chopped but still have some texture. Add the chickpea mixture to the mixing bowl, along with the black pepper and salt. Stir until all of the ingredients are well mixed. Taste the mixture and season with additional salt if necessary.
Begin heating the oil in an extra-deep 12-inch skillet over medium-high heat. Shape the mixture into patties by first squeezing 1/4 of the mixture in your hands to make a tight ball. Flatten the ball into a patty, making it as thin as you can before it starts to crack. Repeat with the remaining mixture to make three more patties. Pour the 1/3 cup of flour onto a plate, and dredge the chickpea patties lightly in flour on each side. (Discard any remaining flour.) Add the patties to the hot oil, and fry until golden brown on each side, about 3 minutes per side.
While the patties cook, stir together the mayonnaise, lemon juice and olive oil in a small bowl. Set aside.
To serve, remove the patties from the skillet and place each on a bun. Top with lettuce, tomato and 1 tablespoon of the lemon-mayonnaise mixture (or to taste).
Yield: 4 servings.
