The recipe for Craving Ellie in My Belly this week was Black Bean Mexican Style Pizza. I was excited to try this recipe because the black bean dip that you use as the spread for this pizza sounded really tasty. I made these for dinner last night and luckily, Kayte made them for lunch, so she tweeted about how good they were, just the way the recipe was written. Since she raved about them as is, I didn't change anything about these when I made my first batch.
I even got out my little cookie cut and made tiny little tortilla circles and I think this would make a great appetizer or party dish. Very delicious.
I could not keep my fingers out of this black bean dip. It was good. Plus the whole thing took maybe 20 minutes to make- blending up the dip, throw the pizzas together, cook and clean-up. I can handle that.
For my hubby and kids, I added some shredded chicken before I put the cabbage (I used angel hair coleslaw from the bag, which is just cabbage, but already thinly sliced) on top and then melted a little cheese on top. No complaints from any of my family members. They actually really liked this dinner too.

This is such a wonderful combination of flavors. I like the idea of making into appetizers too.
I love the minis! You're right, it's a perfect little appetizer bite. I'm glad that this ended up being a dinner that your whole family enjoyed.

Aw, thanks for the shout out. Yours look wonderful. I was the same way with the dip...said it serves four, but by the time I got done "testing" the dip, maybe three only! Next I am going to make one with cannellini beans subbed for the black (I loved the black, just going to branch out and see), rosemary for the herb, tomatoes and peppers for the topping...sort of an Italian flare. I'll let you know. I liked the idea of the chicken on top that you did also...so many possibilities. Who knew??

I love Mexican food. I've never made a black bean dip. I usually just use refried beans. It looks really delicious. I'm going to have to add it to my to-make list!

I do a way less fancy version of that's basically healthy refried beans and cheese on a tortilla, hahaha. Yours is much more elegant!
What a great idea about cutting the tortillas with a cookie cutter; I think this would make a great appetizer for a party or get together. Looks great! I'm not sure if that is a placemat or tablecloth but I love that pattern behind your dishes!

I couldn't believe it when I saw this over on tastespotting. I used to make something very similar when I was still in high school - also a pizza-ish type base with black bean dip on top. Of course my brother used to think I was super weird, but I actually quite liked my little creation. Glad to see I'm not the only one who likes this combo!
And I think I must it again. :-)
