I made mini, mini bundts. Meaning I used one of those pans that has 12 mini bundt molds.
I remember these being very good.
A couple of them crumbled a little bit, from the nutty-sugar swirl that is in the middle, but I remember that we ate the crumbs of the crumbly ones anyway.
I had a problem with the glaze, but it sounded like many people had the same problem. Mine wasn't pourable at all. Someone mentioned there might have been a little bit too much corn syrup in the glaze.

ReplyDeleteThey look very nice! I just loved making the minis, have to remember to do that more often. Guys liked having their own little cakes also. I didn't have a clue as to what to do about the icing so I just added more corn syrup and it seemed to work fine. Well, as fine as it could be with my very limited talents in the drizzling skills department.

ReplyDeleteMini mini bundts? That's a pan I might need to own! After seeing all the problems people had with the glaze, I'm glad I didn't attempt it. The cook has to eat the crumby crumbs. It's a rule in the back of the book. :-)

ReplyDeleteOooh, pretty! Your mini bundts look like they're wearing little halos :) I couldn't figure out what the heck went wrong with this glaze - interesting to hear it might actually be a case of too much corn syrup. In any case, I'll definitely skip the glaze next time.
