No, my oven is not fixed yet, but at the end of last week ,we needed to mark the ending of our Alphabet Days and what better way than with cake? This cake is more like a muffin or quick bread, but it is tasty and it is nice to have a break from all the calories. It was super easy to throw together and very moist.
Low-Fat Chocolate Zucchini Cake adapted Best Bites in Boston, this recipe from April Perry
1 cup low-fat vanilla yogurt
1 1/2 cups sugar
2 eggs
2 cups shredded zucchini
2 1/2 cups flour
1/2 cup lowfat buttermilk
1 tsp vanilla
4 Tbls cocoa powder
1 tsp cinnamon
1 tsp salt
1 tsp baking soda
1 tsp baking powder
Cream together first 3 ingredients. Then add remaining ingredients and mix well.
Pour batter into a greased 9 by 13-inch pan and sprinkle with- 3/4 cup brown sugar, 3/4 cup chopped pecans or walnuts, and 3/4 cup chocolate chips (I used minis). Bake at 350 degrees F for 45-50 minutes. Cool for a few minutes, then dig in!
This looks so yummy! I just got a recipe for chocolate zuke cake-but it wasn't low fat, so yours wins. OF COURSE you can print any recipe you want of mine! No problem at all. I was telling my brother about your kiwi smartini-we have to make them. They look soo good.

ReplyDeleteThis looks delicious!! I've wanted to try a zucchini cake for ages :) How many slices does this make? I imagine from the amount of flour used that it makes quite a large cake, but it's hard to visualise! Thanks - I'm really excited about trying it!
