This is a way to have perfect rice that was shown at our cooking class as well.
Put 1 cup (or however many cups of rice you need) in a saucepan. Put your finger on the rice, just touching it, and fill with water until your first knuckle, or the first line on your finger. Cover and bring to a boil over medium high heat, then cover and reduce heat to medium low; cook for 20 minutes.
For more flavor, saute celery, onion, and garlic in a little butter. Add rice and cook for a minute. Then add water as described above and cook.
