MSC- Coconut Cupcakes

It's that day of the month again, the day we celebrate Cupcakes!
This months MSC selection-Coconut Cupcakes, was chosen by Jennifer over at Cinema Cupcakes.
I decided to make these, as well as some Red Velvet Cupcakes (which I will post on the 20th for The Cake Slice) when I made dessert, as part of dinner, for the local homeless shelter.
I didn't have to cut the recipe in 1/2 or anything, because I needed as many cupcakes as I could get.
I got 24 cupcakes from the full recipe.
The recipe can be found on page 28-29 of Martha Stewart's Cupcakes.
The recipe calls for a 7-minute frosting, flavored with coconut extract, but that isn't my favorite frosting and since I was making red velvet cupcakes too, I decided to make 1 frosting that would be good with both. I decided on cream cheese frosting.
I ran to the store to pick up a few items for the dishes I was making for dinner, to serve at the homeless shelter and forgot cream cheese. Smart, I know.
Well, time was running out and I had the ingredients for Martha's Fluffy Vanilla Frosting, which is also found in the cupcake book, so I just used that for both cupcakes.

I didn't taste even a bite of these, but I let my son try one unfrosted and he said it was "Amazing!".
They received many compliments that night, so I think they are a winner.

I didn't really care for the process of making the 7 Minute Frosting, but thought it tasted pretty good.

I bet the folks at the homeless shelter really appreciated your generosity.

Your naked cupcake is very cute - and good for you for baking them for some very appreciative people.

I think cream cheese frosting is always the right call (and I think I would have preferred it to the boiled frosting) - but I also forgot to pick up cream cheese at the store. Oh well...looking forward to the S'mores cupcakes!

Amazing is right, best cupcake EVER in my opinion. Good choice for frosting, I bet that tasted lovely on those.

I love the colored sugar on your cuppys! I bet the frosting was great on them. I liked the 7 minute frosting but I honestly won't make it again most likely. Glad that everyone enjoyed them!

You are really a wonderful person for making cupcakes to bring to your local homeless shelter and you should be very proud of yourself! the cupcakes look great and I am so glad that your son enjoyed one too!! I didn't get to these this month...but I am definitely in for the smores cupcakes next month!

It sounds like this was the cupcake to be charitble with! (my double catch of these were sent over to a funeral/wake for my friends father.)

And you've given me a nice idea for some of my baked goods as well, thanks! ((Oh and i love the coloured sprinkles on the top, it adds alot of life to them!))

Interesting... I've been thinking of retirement homes for "unloading" some of my baked goods. Great idea! These look beautiful!!! And I agree - the cake was fabulous on it's own. I also bypassed the 7-minute frosting... too marshmallow-ish for me! Nicely done Mary Ann!
